Spicy Pan Seared Sea Scallops with
Sweet Roasted Red Pepper Cream Sauce

Serves: 10-12 People

Sea Scallops:

Ingredients:
4 Dozen  Large Sea Scallops
1 ½ tablespoons of Salt Free Cajun Seasoning
¼ Cup Olive Oil

Instructions:

  • Wash Scallops and Remove any Shell Particles; Pat Dry with Paper Towels
  • In Large Bowl Combine Oil and Seasoning
  • Toss Scallops in Oil Mixture
  • Heat Non Stick Skillet over High Heat
  • Sauté Scallops Approximately 4 Minutes Per Side
  • Serve on a skewer with Sweet Roasted Red Pepper Cream Sauce

Sweet Roasted Red Pepper Cream Sauce:
 
1/3 Cup Pureed Roasted Red Peppers
1 1/3 Cup Heavy Cream
Salt and Pepper to Taste

 

Scallops cook quickly. When done, they should feel soft and resilient to the touch. They should also flake easily when tested with a fork and appear moist inside.
