Spicy Pan Seared Sea Scallops with
Sweet Roasted Red Pepper Cream Sauce
Serves: 10-12 People
Sea Scallops:
Ingredients:
4 Dozen Large Sea Scallops
1 ½ tablespoons of Salt Free Cajun Seasoning ¼ Cup Olive Oil
Instructions:
- Wash Scallops and Remove any Shell Particles; Pat Dry with Paper Towels
- In Large Bowl Combine Oil and Seasoning
- Toss Scallops in Oil Mixture
- Heat Non Stick Skillet over High Heat
- Sauté Scallops Approximately 4 Minutes Per Side
- Serve on a skewer with Sweet Roasted Red Pepper Cream Sauce
Sweet Roasted Red Pepper Cream Sauce:
1/3 Cup Pureed Roasted Red Peppers
1 1/3 Cup Heavy Cream
Salt and Pepper to Taste |
